The oak honey arrived set and crystallised not runny and dark as shown on the website. I was informed that the honey had been bottled 9 months ago and crystallisation is natural and if I heat it everytime I want to use it, the honey would go back to normal. I returned the honey without trying it so cannot comment on taste or flavour.

Raw Artisan Honey Shop

Dear Christine, Thank you for taking the time to leave us a review here as well. As I explained in my email to you earlier, it is the nature of raw honey to became set, crystalised. It is a natural process and it doesn't affect the quality of the honey. But of course, if you prefer your honey runny, it is easily achievable with those techniques I explained to you. However, it seems like you have misunderstood the process, you are NOT required to melt your honey every time you want to eat it, you simply do it once and it will stay runny for months or weeks especially if you keep it at room temperature. Bees are NOT making honey in the winter months, so if you buy honey in February from anyone (even your local beekeeper down the road or TESCO) that honey will be most likely from the previous summer. So yes ALL our honey is from the previous summer (harvested from as early as mid-April to mid-September). I am very sorry that you didn't give our honey a chance by tasting it to prove that it is as lovely as the many 5* review claims it is. We do hope you didn't give up on raw honey. Kind regards, Tamas Raw Artisan Honey Team
