Raw honey is not only great as a sweetener in baking and cooking. This delicious nectar is also renowned among bartenders around the world. In many cocktails, honey’s thickness and depth of flavour can stand up against other ingredients, whereas simple syrup or agave nectar often recede into the background.

 

We recreated one of our favourites, a Prohibition Era cocktail, The Bees Knees, to bring a speakeasy vibe into our home. (We used the trusted Difford’s Guide recipe and adapted it slightly to our taste.)

 

Did you know!? The phrase “bee’s knees,” predates the cocktail by more than a century. It was originally used to indicate something small or insignificant. Later, as its usage evolved, the idiom was applied to people or things that were considered the best or “height of excellence.” That is definitely true to The Bees Knees cocktail!

 

Preparation:

Mix 4 teaspoons of liquid Raw Artisan Honey Wildflower Honey with 20ml fresh lemon juice and 10ml freshly squeezed orange juice in a shaker. Add 50ml floral gin (to complement the honey) and one egg white. Shake all the ingredients vigorously with ice cubes then strain it in into a chilled coupe glass. Serve with an orange peel or sprinkle with pollen.
