An easy and yummy crystallised honey cake recipe!
It's been ages since we swapped sugar to using honey as an everyday sweetener and also for baking and cooking. So I am always at the lookout for new recipes using honey. Just came across this recipe by accident in the Guardian so I thought I will share it with you here.
This recipe is geared around set, crystallised honey. I think it could give you some inspiration to use your set honey. It is super easy to make.
The ingredients:
Heat the oven to 200C (180C fan)/390F/gas 6.
Melt 170g honey and the butter in a pan over low heat. Take off the heat, stir in the eggs, flour and baking powder until well combined, then pour into a greased and lined 20cm cake tin.
Bake for 35 minutes, or until a skewer comes out clean when pushed into the centre of the cake. Cool on a wire rack.
Spike the cake all over with the skewer, then spread or crumble the remaining honey evenly over the top. Serve plain or decorated with flowers."
